What do you get when you combine 160 year old family recipes handed down to a 4th generation Italian Salumiere, with pasture-raised heritage pigs on family-owned sustainable farms?  Olli Salumeria; artisanal slow-cured salumi!

Good salami is directly affected by the quality of the pork, and Olli Salumeria goes to great lengths to obtain the best heritage-breed (Berkshire and Mangalista) pigs available. The pigs are humanely pasture-raised on family farms (never confined to pens or crates), and are fed all-vegetarian feeds (antibiotic-free and never fed animal by-products).

We currently stock 4 flavors in salame:

  • Calabrese – Red pepper and paprika
  • Molisana – Garlic and black peppercorns
  • Napoli – Smokey and spiced
  • Norcino – Salt and white pepper

All are made with Sangiovese wine.

When we first tried these, we immediately fell in love. You will too!

These salami are great for holiday appetizers and gifts. (They are shelf stable.)
